Rosca De Reyes - Recipe

Here is the famous, traditional recipe of the Three King's Cake:
You will need:
  • 1 kilo of flower
  • 100 gram of margarine (approximately 2 huge spoons)
  • 200 gram of sugar
  • 100 ml of water
  • 4 eggs
  • 30 gram of dried yeast
  • dash of grated lemon skin
  • dash of grated orange skin
  • 1 cup of cajeta
  • coco
  • raisins
  • 1 slice of candied ananas
  • candied citron (acitron)
  • candied cherries
  • candied orange
  • 3 candied figs
  • 1 egg to glaze
Preparation:
  • Combine flower with yeast add margarine, sugar, eggs, water. Mix.
  • Add more flour if necessary to form a soft dough
  • Now add grated skins. Punch down dough while mixing,
  • Mix thoroughly. If you wish place inside the porcelain tiny doll.
  • Place in bowl, cover and let rise in a warm place until double - about 1 hour.
  • Roll the dough with a rolling pin into a long stripe (50cm x 20cm x 1cm)
  • Glaze the edge of the rolled dough with a thin layer of the egg to be able to paste close the ring (rosca),
  • Shape the loaf: put cajeta along in the middle of the cake and roll the dough covering the cajeta. The cajeta has to be inside the roll. Now form the crown,
  • Place on greased baking sheet, glaze with egg white,
  • Decorate with candied fruits,
  • Let bread rise in warm place for 30 minutes.
  • Sprinkle top with sugar.
  • Preheat oven to 180° C (350° F)
  • Cooking time: 35-40 minutes
