Rosca De Reyes - Recipe

Here is the famous, traditional recipe of the Three King's Cake:
You will need:
  • 1 kilo of flower
  • 100 gram of margarine (approximately 2 huge spoons)
  • 200 gram of sugar
  • 100 ml of water
  • 4 eggs
  • 30 gram of dried yeast
  • dash of grated lemon skin
  • dash of grated orange skin
  • 1 cup of cajeta
  • coco
  • raisins
  • 1 slice of candied ananas
  • candied citron (acitron)
  • candied cherries
  • candied orange
  • 3 candied figs
  • 1 egg to glaze
Preparation:
  • Combine flower with yeast add margarine, sugar, eggs, water. Mix.
  • Add more flour if necessary to form a soft dough
  • Now add grated skins. Punch down dough while mixing,
  • Mix thoroughly. If you wish place inside the porcelain tiny doll.
  • Place in bowl, cover and let rise in a warm place until double - about 1 hour.
  • Roll the dough with a rolling pin into a long stripe (50cm x 20cm x 1cm)
  • Glaze the edge of the rolled dough with a thin layer of the egg to be able to paste close the ring (rosca),
  • Shape the loaf: put cajeta along in the middle of the cake and roll the dough covering the cajeta. The cajeta has to be inside the roll. Now form the crown,
  • Place on greased baking sheet, glaze with egg white,
  • Decorate with candied fruits,
  • Let bread rise in warm place for 30 minutes.
  • Sprinkle top with sugar.
  • Preheat oven to 180° C (350° F)
  • Cooking time: 35-40 minutes

Dia De Los Santos Reyes


One of the most famous holidays in Mexico is Dia de los Santos Reyes Magicos - The Day of the Kings. The celebration takes place on January 6 and it is proceeded by The Day of Virgin Of Guadalupe and Christmas and it is celebrated to remember the day when the Three Wise Men following the star to Bethlehem, arrived bearing their treasured gifts of gold, francincense and myrrh for the Baby Jesus. On the night, of January 5, the figurines of the Three Wise Men are added to the nativity scene. It is also the most awaiting day by children. Before going to bed the children place their old shoes under their bed , where the Wise Men (Melchor, Gaspar, or Baltasar) will leave them their presents.You can feel the excitement. As soon as they wake up, which is earlier than any other day, they run to see the gifts that the Three Reyes left for them. Happiness overflows every Mexican home.
On January 6 many parties and celebrations take place all over Mexico, where Three King's Cake is eaten. In Latin American countries it is called Rosca de Reyes. This sweetbread cake has the shape of a crown and it is decorated with candied fruit. There are Roscas of all sizes, very small ones for two or three people and up to the ones that will delight more that twenty people. Before it bakes, a tiny plastic or porcelain doll of Baby Jesus is placed inside the cake. The Baby is hidden because it symbolizes the need to find a secure place where Jesus could be born, a place where King Herod would not find Him. Each person cuts a slice of the Rosca. The knife symbolizes the danger in which the Baby Jesus was in. One by one the family members carefully inspect their slice, hopping they didn't get the figurine.Whoever finds the baby doll shall be the host, and bring tamales to a new celebration on February 2, which is Día de la Candelaria or Candle mass day, and he or she also shall get a new Ropón or dress for the Baby Jesus of the Nativity scene.
The Rosca is served along with Tamales, made of corn which was the pre-Hispanic food , and hot chocolate which is a gift from the native peoples of the New World. The tradition of celebrating the Epiphany and sharing the Rosca was brought to the New World by Spaniards.

Welcome to my blog


I always eat chicken, pork, fish and beef. I guess you too if you are not vegetarian. Food is one of the most important things in my life. Nothing but real, tasty food. I don't talk about the famous everywhere now fast food but the one which keeps my stomach full, leaves my heart satisfied and my soul lite - THE MEXICAN FOOD.
